I think I'll go for a low tech approach to note taking - Jotting in a physical notebook - because for me that will be quicker and I'm likely to do it more often than using a laptop or PC. If I number the pages, I should be able to create an index - maybe in Excel - to keep control. But for essay preparation, as a Windows user, I will use OneNote http://office.microsoft.com/en-gb/onenote/ (it comes with recent versions of Microsoft Office). The beauty of OneNote is that you can copy and paste in from anywhere and then (a) organise stuff using tabs (b) search and (c) it automatically captures the URL to help you return to the source later and helps to avoid inadvertent plagiarism. Maybe one of Karen's Apple products does something similar.
